I’ve decided that I’m addicted! Addicted to strawberry lemonade cupcakes! After being inspired by a favorite Food Network show, Cupcake Wars, the 12 year old and I decided to try our hand at creating an unusual blend of cupcake. Our first baking adventure we made Apple Ginger cupcakes with Carmel cream cheese frosting and Lemon cupcakes filled with lemon curd and Strawberry Lemonade cream cheese frosing. It was fun experimenting like that and the cupcakes were a hit!
The 12 year old has been bugging ever since to try something new, so this weekend we again decided to create some yummy cakes. Originally we wanted to make a chocolate mocha but since we were taking them to the big sis’s house for dessert and she can’t eat chocolate due to being a nursing momma, we changed our plan to a Coffee cupcake with a coffee carmel buttercream frosting and of course the Strawberry Lemonade. They were great, not great looking…in fact my husband says we get an “F” in presentation, but they taste great! My hubby the coffee drinker loved the coffee cupcakes. (smile) I wish I could say they looked like this…
But really they looked more like this….
Hence the not so good grade in presentation. We’ve decided to work on our frosting texture. I’ll probably have to call mom!
So here’s the problem…. no matter what they look like they taste great and I can’t leave those darned Strawberry Lemonade cupcakes alone! I don’t know what to do! Lemon anything for dessert always makes me smile but these call my name from the refrigerator! I seriously, could eat several in one sitting! I’m even wondering if I can freeze the extra frosting cause if it stays in the refrigerator I may just get a spoon!
So the solution for the moment….feed them to my husband, because he doesn’t gain any weight no matter what he eats. But he also doesn’t like lemon dessert….
